Sausage, Meat and Fish
The VIT® gene probe technology and its use in the quality control of food processing companies.
Pathogenic Microorganisms
In food processing companies, it is necessary to test for various pathogenic microorganisms such as salmonella, listeria, staphylococci and others in the final product inspection. Highly specific detection is mandatory, as contaminated products pose a direct health risk to the consumer.
Microbiological controls are required both in the finished end product and in the process. In both cases, specificity is mandatory. On top of this, however, rapid detection can save valuable storage capacity or, as an in-process control, help to avoid the production of faulty batches.
