Aim of the Webinar

Alicyclobacillus spp. are among the critical spoilage organisms in the fruit juice industry. Their spores, especially Alicyclobacillus acidoterrestris, survive standard pasteurization processes, produce sensory off-flavours (especially guaiacol) and can render entire batches economically unusable.

This webinar shows how this invisible danger can be recognized in time, microbiologically limited and prevented in the long term - with concrete recommendations for quality management and laboratory practice
